Bolognese sauce for lasagna
Part 1 of my lasagna
The first step of my pasticho, or lasagna: a classic Bolognese sauce. In the next videos I make the béchamel, the pasta and the assembly.
Video in Spanish on my YouTube channel.
Ingredients
As I list them in the video description.
- 750 g ground beef
- 250 g ground pork
- 3 large onions
- 2 carrots
- 4 to 5 celery stalks
- 3 garlic cloves, crushed
- 3 bay leaves
- 2 ½ tbsp salt
- 2 tbsp sugar
- ¼ cup milk
- 2 heaping tbsp tomato paste
- 1 tbsp thyme
- 1 tsp black or white pepper
- 6 to 8 whole cloves
- 1 l water
- A few basil leaves
- Olive oil
- 200 ml dry red wine
- 1 jar (about 680 g) pure tomato sauce
How it's made, in short
- Finely chop the onion, carrot and celery and sauté them in olive oil over medium-low heat with the garlic.
- Add the pork and then the beef, with the bay leaves and cloves.
- Add the red wine, then water to cover, and simmer covered; then add the spices.
- Add the tomato sauce and paste, adjust the salt and balance the acidity with the milk and sugar.
- Finish with the basil and cook on the lowest heat about 2 hours, until thick. Remove the bay leaves and cloves.
