Ingredients
As I list them in the video description.
Falafel
- 400 g chickpeas, soaked overnight in 2 l water
- 6 small or 4 large garlic cloves
- 1 small onion
- 50 g cilantro leaves
- 1 ½ tsp salt
- ½ tsp allspice
- ½ tsp seven-spice blend
- 1 tsp ground coriander
- 1 tbsp cumin
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbsp lemon juice
Tarator sauce
- 1 cup tahini
- ½ cup water
- 4 garlic cloves
- ½ cup lemon juice
Sandwich
- Pita bread
- Parsley, tomato and the white part of green onion, finely chopped
- Pickled cucumber or turnip
- Sliced radish
- Mint leaves
How it's made, in short
- Grind the soaked chickpeas with the garlic, onion, cilantro and coriander, in two batches, until it looks like fine bulgur.
- Add the salt, baking powder and spices, and knead briefly.
- Add the baking soda with the lemon and a little water, so the mixture is neither too dry nor too wet.
- Let it rest, shape the patties and fry them in plenty of oil over moderate heat.
- Blend the tarator ingredients and build the sandwich in pita bread.
