Hummus
Chickpea dip
Chickpea cream, better known as hummus, is probably the most popular dish in Arabic cooking. This is how I make it: creamy and perfectly smooth.
Special ingredients: Tahini Amazon, Lemon salt Amazon
Video in Spanish on my YouTube channel.
Ingredients
As I list them in the video description.
- 500 g chickpeas
- ½ cup tahini (sesame paste)
- 1 tsp cumin
- 1 tsp citric acid (lemon salt) or the juice of ½ lemon
- 1 tbsp salt
- 3 cloves garlic
- 1 tsp baking soda
How it's made, in short
- Soak the chickpeas overnight in plenty of water with the baking soda.
- Rinse and cook them until very soft, skimming off the foam.
- Drain, let them cool a little and blend until creamy.
- Add the tahini, lemon, salt, cumin and garlic, and mix well.
- Spread on a plate and finish with paprika, cumin, olive oil and a few mint or parsley leaves.
