Labneh

Strained yogurt balls

Labneh, or laban, means yogurt in Arabic. Here I make it dry, rolled into balls, with a texture similar to ricotta. It is delicious with za'atar, olives, tomato and pita.

Ingredients

As I list them in the video description.

  • 2 kg plain yogurt
  • Salt (optional)
  • Olive oil or your oil of choice
  • Sterilized jars

How it's made, in short

  1. Place the yogurt in a cloth over a strainer with a bowl underneath so the whey drains.
  2. Stir it every three or four hours; in about 24 hours it should be dry, like a block of ricotta.
  3. Roll it into balls and leave them a few hours on paper towels, covered with tulle.
  4. When there is no moisture left, pack them in sterilized jars and cover with oil.
